Course information provided by the Courses of Study 2019-2020.

This course will explore the scientific principles and processes forming the foundation of plant-based systems that provide food, fiber, beverage, environmental enhancement, medicine and art. We will explore the morphology and physiology of plants and consider the science behind natural and man-made growing systems and how humans, plants, climate and soil all interact to develop, grow, harvest and process plants to meet our needs. This course will examine and challenge notions of sustainable, organic, GMOs, and how plants solve our environmental problems. Students will develop a greater understanding of the diversity of plants, how they grow and how they are important to individuals, communities and the environment.
